It’s the second instalment of our campsite cooking recipes, (read the first one here) the ones to make you feel like you can still live a life of luxury and good food whilst spending some time in your campervan.
This time we have a few junk food recipes that I’m sure most people would never dream could be cooked outside the comfort of their own home, when holidaying in one of our campervans there is always the option to cook inside on the provided stove, but if you want to experience the rustic feel of nature then getting the campfire going and cooking some good hearty food over it then nothing can compare. Is it just me or when camping does it feel like you’ll eat even more guilty treats and junk food than you ever would when at home…you’re on holiday so it’s fine!
Full English Breakfast
Now this one might sound obvious, but you don’t have to give up the comforts of a late morning indulge in a fried breakfast because a campfire is the perfect place to make one, and the anticipation of watching it cook will make it taste all the more better.
Ingredients:
Eggs
Bacon
Beans
Bread
Sausages
Mushrooms
Tomatoes
Method:
All you need for this one is a frying pan and your campfire, you can keep your perishables all fresh in your compact fridge in the campervan and take them out when you need it, take the lid of the tin of beans, place them over the camp fire and they’re ready to cook. Coat your pan with the spray oil to cook your eggs, bacon and sausages, just be careful to keep the can away from the open fire as it is compressed air! Simple and easy and one of the best treats about being on holiday!
Chilli Cheese Fries
This is one to cook on the first night of your camping trip, due to the fries not keeping long in your freezer compartment or cool bag.
Ingredients:
Spray oil
Mince
Tinned Kidney Beans
Chopped Tomatoes
Mixed Herbs
Fries
Grated Cheese
Method:
Cook the mince down on either the camp fire with a bit of the spray oil, or on your stove to save yourself some time. Whilst doing this, place the fries in some tin foil and coat the foil with the spray oil, cover completely and place the package over the fire. When the mince have browned, add the tinned tomatoes, kidney beans and herbs together until cooked. Remove the chips and pour the chilli mixture over the top. Add the cheese and return to the fire until golden and bubbling on the top!
Pizza pockets
Now this is one that the kids will love, they can get really involved in making it, and tailor it to their needs.
Ingredients:
A packet of pitta bread
1 can/jar of tomato spaghetti or pizza sauce
Grated cheese
Optional toppings: sweetcorn, ham, peppers, pepperoni, etc.
Method:
Cut the pitta breads in half and cut it open down the middle creating a pocket. Add a spoon full of the sauce spreading it around the pocket then add the cheese to your desired taste. Then mix in your desired toppings/fillings. Wrap each individual pocket in a piece of foil and suspend it over the campfire, depending on the heat of the fire and because we’re using pre-cooked toppings or ones that can be eaten raw these don’t take long to cook at all, around 2-3 minutes on each side, until they’re warm and gooey inside. Enjoy!
